Would this work with a Peloton bike?

It depends on if there is a hole on the bike pedal.

I have read that these sometimes collapse. Anyone have that issue?

Bought my daughters about a month ago and still in great condition. They dont collapse and the velcro is very strong

Are these straps large enough to add added support to a shimano cleated sandal on my pedal of my adult trike, disabled and looking for added heel supp

No, there must be holes for the straps.

Is this strap good for kids bike?

It's supposed to be. However, I wouldn't purchase from here! I ordered a pair and only received one strap. So did others
