how are they prepared?

Just like pasta. But to get it closer to pasta consistency boil it A LOT longer than it says. I even put the cover partly on to really soften it. And honestly, I keep it boiling until it absorbs all the water. Trust me. If you want it as close to pasta consistency that is.

Can you refrigerate after opening if you don’t need to use them all?

You can refrigerate what you don’t use for 3-5 days and be totally fine. You can also freeze it no problem.
