Very sharp - very nice
To be honest - if you buy a more expensive boning knife, you wasted money. Nothing can be much sharper - easier to use. For my liking, it could be slightly more flexible. But overall - amazing quality and functionality.

This knife is just amazing, cuts meat and chicken very smoothly and is very sharp without even putting much pressure on it .

切れやすいけど厚みのある魚､例えばマグロの解体とか少し使ったけど切れ味は良かったけど刃が薄いから切れなくなると言われました。当たり前のクラッカーでした。でも解体後のさくを切るのは最高です。
