Great for diabetics who want a great tasting dessert

Incredible!
I can’t believe it’s taken me this long to write this review, but here it is! This cake mix is fantastic! Every once in a while I like to make a low carb dessert to satisfy my cravings. And with this mix, I was able to make the best tres leches cake I’ve made since starting keto. I could only wait about 10 minutes after soaking it with the tres leches mixture and adding the whipped cream topping, before taking a bite 😂 I managed to stretch the cake out to last three days before I finished it. And by then, the cake had absorbed the tres leches beautifully. It wasn’t dry, nor did it have any gross chemical after taste and cooling effect like 99.99% of all other low carb/sugar free baking mixes have. I also didn’t have any of the digestive issues I tend to have from similar products. Although I can’t attest to the “dryness” that some reviewers have mentioned, I can say that this is the best low carb dessert I have ever made, and it’s not one that I’ve been able to replicate with other brands. Overall, I HIGHLY recommend this cake mix!

Fluffy,not very cake like but ok
Ok maybe I shouldn’t make this review yet.the cakes are baked I made two small 8x8 round out of this mix .its interesting .Thats for sure .it had pretty good reviews .And king Arther keto was not available to me (that’s my favorite) so I chose this .a little disappointing,because it’s my bday cake .Idk how I feel about it .it fluffed up .But it doesn’t seem like cake .Its just ok .Definitely will not buy again(I had to come back and add some more info ) update ::after ganache and filling i actually loved the texture .It felt biscuit like ? Hard to explain .i think in hindsight.I would have beat the egg whites ,added in egg yolks then added dry ingredients..Because the dry mix was so powdery fine .I feel like it would have made for an excellent sponge cake .If I find it on sale I might give it another try .

More bready texture than cakey texture
It has more bread texture than muffin texture but at the same time, I like that texture. I would buy it again but having on mind to make a Dinner roll or something like that

With a few added ingredients, these are FABULOUS!!
These mixes are the best base ever for low-carb cupcakes or muffins. I always add more sweetener, and 1/4 cup of plain yogurt or sour cream in addition to the directions. I've made lemon poppyseed, blueberry, banana nut, "jalapeño "corn" muffins, chocolate chip, and of course delightful vanilla cupcakes. It did weird things to the texture when I added cocoa powder - so do not recommend tweaking for chocolate cake. Enjoy! Also, store in airtight container as these will dry out more quickly than gluten baked goods.

Get this!
I wouldn't guess it's low carb. They turn out great! Texture is spot on, and they taste good. This is now my go to for a quick dessert that won't make you feel bad.

More like bread than cake.
I am a huge fan of cupcakes, so when I tell you that I took 2 bites of these and tossed it in the bin, that’s saying something. I’ve got a few un-frosted “cupcakes” that I’m going to try with some strawberries and whipped cream in hopes of salvaging some of this batch as shortcake bases. Overall, very easy to make and make quite a bit for the pouch size. The cupcakes puff up at baking and look quite pretty - but flavor-wise these are problematic. They aren’t sweet (honestly they taste kind of stale - my kiddo described them as “dusty tasting”) and the texture is very, very dry. Very bread-like. If you’re into fairy bread, this would be quite good for that. But if you’re expecting cake? This is probably not going to be it for you.
