Still Going Strong After 4 Years!
I’ve had this Instant Pot Accu Slim Sous Vide for about 4 years now, and it’s honestly one of my favorite kitchen tools. With 4 kids, dinner time can be chaotic, but this makes it so much easier to get a great meal on the table without a ton of effort. We mostly use it for steak—it comes out super tender and juicy every time, way better than what I used to make on the stove or grill. I just season the meat, seal it up, set the sous vide, and forget about it while I get everything else done (or chase kids around the house). It’s easy to use, hasn’t given us any issues in all the years we’ve had it, and makes me feel like I actually know what I’m doing in the kitchen. Totally worth it.

Simple, effective, quiet, works like a charm
Pros: - Good price point - Built solid, did not feel flimsy or cheap - User friendly, simple interface. (started cooking with it right away without having to consult the manual) - Simplicity (no need to struggle with wifi or download an app) - Quiet. It had a hum but it was not loud, a couple feet away it was drown out by the vent hood - Kept the water bath the right temperature, I double checked it using a thermometer I know to be accurate - If you have an Instant Pot you can use the cooker and inner pot to do sous vide. It is designed in such a way you can clip it on the lip the lid locks into easily. Cons: - No app ** ( I actually consider this a pro personally, I can set a timer to check on the this thing and not have yet another device connected to my crowded home network) Since I have just starting using this unit no negatives stand out to me as of yet. I have not cooked a large batch, tried it in a large bath and it is still new so cannot judge the wear and tear. I will update this review over time. About me: I work in IT so I am tech savvy, and as such, I prefer things that have a job to do, do it well and don’t over complicate things.

Great product, even better customer support
The Good: The temperature is very accurate, within a few 1/10's of a degree tested with a calibrated Thermoworks thermometer. Tested from 133 to 165. The water flow in a 14qt pot is very gentle but thorough resulting in even temperature throughout the pot. The user interface is easy and intuitive and didn't require reading the manual. I love that you do not need an app, smartphone, wi-fi or bluetooth connection to use the device. The biggest complaint I read with connected devices are connectivity issues. I was up and running in seconds my first use. This unit is whisper quiet. When I first turned it on I thought it was not working until I saw water movement and the temperature rising. The temperature guage always shows current water temp, which I like, so one can know the actual temp as opposed to where it was set. Timer continues even when adding water and temp drops. The manual is very nice and well laid out, with the customer support phone number and e-mail easily found prominent throughout. Speaking of customer support, probably the biggest positive is Instant's customer service and support. Within 3 minutes of dialing their number I was speaking to a live person here in America. He was very helpful and although he did not have an answer placed me on hold and within 2 minutes had the answer for me. My experience with Anova was vastly different, no one answered the phone, no response to forced voice mail, and their "chat support" was automated spitting back canned impertinent responses. Suffice it to say Anova customer service steered me away from their product, Instant's caused me to order their product as soon as I hung up the phone. There were a number of negative reviews about the clamp which I understand, but; there is no need to tightly clamp the device, all you need to do is secure it to which I felt the clamp was more than sufficient. The overall build quality looks very solid including cord and buttons on the user interface. Heating test: In a 14qt pot it went from hot tap water of 119 degrees to 133 in less than 8 minutes, from 133 to 165 in 21 minutes, and from cold tap water of 58 degrees to 133 in 45 minutes. In a 28 qt cooler with the lid off it went from 120 to 133 in 27 minutes. This is my first sous vide but for normal family use this seems more than adequate and heated faster than I expected. All sous vide makers recommend preheating water. The "Not so good": There is nothing really major to report here. I will say that if you plan to do large parties, commercial use, and using containers larger than 20qt, I'd consider a 1200 watt unit, which may be overkill for typical family use. Another small nit pick is that the clamp pulls the Accu Slim body so it rests on the side of the inner pot which can cause a slight rattling noise in a stainless steel pot. This is the only noise emanating from the device and is not a big deal. It would have been nice if Instant addressed this in its design as it is a simple fix. I ended up placing a thin rubber washer around body at the Max line which resolved the issue and it is whisper quiet. Overall I am very impressed with the Instant Accu Slim and would buy it again.

Game Changer for Steaks and BBQ
I wish I had this sooner in my life. This is hands down the best tool to use for cooking steak, period. Absolutely perfect to the exact temp you want, all the way through the steak, every single time. And juicy, juicy, juicy. On the recommendation of other users I got the Rubbermaid Commercial 12 Quart Clear Container with matching lid. I used a jig saw to cut out a hole for the Sous Vide cooker and it works brilliantly. There are lids made with a cutout available if you don't want to bother, and even some insulated totes with lids. Just use whatever cooking container or pot you have counter space for and stock up on gallon size freezer bags or vacuum seal pouches. I find the easiest method is to use a freezer bag and after putting the meat and seasoning inside, submerge it in the water while it's warming up to squeeze all the air out before sealing the top of the bag. I've experimented with various temps and cook times and found that the default my unit came, 133F for 4 hours, with works great for perfect medium rare steaks. Take them out and pat them dry before searing on a hot grill or in a pan, or pop them in a smoker for a juicy smoked steak. Once you are used to eating steaks this way, it's very hard to ever go back.

Great value with one annoying design flaw
After deciding I didn't need all the bells and whistles of the higher end brands, I decided to purchase this particular product for my initiation into the world of sous vide cooking. Technically, the product works flawlessly. I've tested the water temperature with my thermapen at various points in the cooking vessel at various times during cooking and it's always stayed within spec. It's not particularly loud (I don't really notice it and am not really bothered by that sort of thing) and it did survive accidentally being fully submerged in the cooking water (the display did become glitchy at the moment but returned to normal function once I fished it out and shook whatever water out of the unit I could .. still works to this day) so build quality is good. The one flaw that quickly became apparent and annoying is the clamp thing. It would have been a better design if the clamp was somehow removable but it's actually part of the unit itself. This means if your cooking container is too thick or has a lip or rim, it could be a bit awkward to keep the stick properly fastened to the pot. Using the clamp, you're limited to how deep the device is to sit in the pot. If the walls of the pot are too high, the device will be dangling high off the bottom of the pot. Often, I end up having to just use it as if the clamp isn't there and place the entire device into the container. This is okay but you'll have to be careful or figure out some way to keep the device from shifting around (which is how it ended up accidentally submerged in my case) .. because the clamp now causes the center of gravity for the device to be slightly off to one side. You also can't sit it flush against the edge of the container unless you face the clamp inwards .. but that would mean the outlet of the water pump would be facing the wrong way. Regardless, as long a you can get the stick in the container and keep it upright, it works well. Water heats up quickly and stays the right temperature. The controls are sensitive and not hard to figure out. At the time of purchase, it was half the price of most competitors worth considering so I'm still very happy with my purchase. Maybe I'll hacksaw the clamp off one of these days and it'll be perfect.

This is the one you want, and here’s why
I spent a LOT of time researching sous vide cookers before buying this one. There are a ton of choices ranging from cheap and iffy, to overpriced and not worth it. The Instant Pot-company model is the one I chose and I am confident that it was the right decision. Disclosure: I do not do plastic bag-based sous vide cooking. I am fairly sure that in years to come we will realize that cooking things tightly wrapped in plastic is just not healthy. I use this cooker only with glass containers, which I am sure limits the performance a bit. But if you are fine with using non-BPA cooking bags, my findings will be relevant to you too. In my experience the four things you should judge a sous vide cooker for are (1) ease of use, (2) accuracy of temperature and timing settings, (3) noise level, and (4) durability. I haven’t had this cooker long enough to answer #4, but as for #1 the operation of this cooker was so intuitive and easy to figure out I didn’t even have to read the manual. Re: #2: - I have tested the water temperatures with a top-of-the-line Thermapen instant-read thermometer, and at multiple settings the readings were never more than 1 degree off. This is excellent compared to what you seem to get with some of the cheaper competitors - and super-important if for example you want to use your cooker to make yoghurt. Re: #3 - this cooker is really quiet, you hear only a faint whir from across the kitchen, and nothing at all from the next room. (Excessive noise is a big criticism of many competing models.) The one “drawback” of this model is that it’s not designed to be controllable via a smartphone app. But honestly, for me this is a positive. I have enough Bluetooth and Wifi radiation in my life already, and using a phone to control a kitchen applicance that’s ten feet away just seems brainless to me. If you think that one day you will want to adjust your cooking temperature after 2 hours by three degrees - while playing golf - maybe consider another model that costs twice to three times as much (yes Breville, I’m talking about you). But for most actual cooks, basing your sous vide cooker choice on smart-phone compatibility is just idiocy.

Thank you, Instant Pot!
I'm new to this cooking method. I can't compare this to the product of other brands. I like the price. Not as pretty as the sexy, gorgeous and expensive Breville Joule, but my Instant Pot circulator doesn't require Bluetooth or a WiFi connection. Set the temperature and time, add water and bagged food and press "play" A potential issue for finicky dishes like my mom's egg custard is the lack of fine tuning the temperature on the Fahrenheit mode. Happily, the Celsius mode offers 0.1 deg increments. I favor its compactness compared to the humongous Anova (my neighbor has one). Its 800 watt element won't heat like 1000 W, but it does the job--sous vide isn't for people in a hurry--it's for people who like their food cooked just right. It would make a difference if you have to heat 12 quarts ( size of many sous vide cooking containers) every time you use it, but I seldom cook enough food to require such a large vessel and the difference might be only a couple minutes. The clamp works for most uses and because the unit will stand on its bottom with sufficient stability, I have made soft boiled eggs in a small saucepan without engaging the clamp. My IP sous vide toy is simple--it works. I do wish it would keep its program, if the water level drops but not a deal killer. The error codes requires referring to the manual--I'll want to keep that to avoid searching online. The user manual has some quick and dirty guides with temperature and cook times to get us started. Forty five minutes at 145 degrees for soft boiled eggs was OK, but no better than America's Test Kitchen's 12 minutes at 167 deg F. Gotta love that giant recipe book, the internet. The unit comes well packed in foam which I cut into smaller pieces and use as a "cover" to insulate the water bath and to reduce evaporative loss. I've never had chicken breast or turkey so tender and juicy as cooked sous vide (I used the turkey recipe from the joule website). Cooking several beef steaks of varying thickness is a snap. Both a 3/4" steak and a 1" steak go in at the same time and come out at the same time, I pat them dry, sear the top side and serve! I was hooked even with having to sear the cooked cuts on a BBQ grill or a frying pan (oil splatters all over the stove and smoke alarms beeping), but now, with my hardware store blowtorch, searing is clean & effortless. With such a low cost to start, why not? Regarding those other cookers with wifi. Sure, you can start a WiFi cooker from work, hours before you get home (if the wifi connection isn't wonky). I can work around not having WiFi--I just cook for a half hour less than the full cook time, and finish the cook when I get home. It takes me 30 minutes to wind down after I get home anyways. It's your basic sous vide cooker. You don't have to overpay for it, so watch for price drops down to as low as $55 between Turkey Day and Xmas. Thanks Instant Pot.

Best purchase ever
Easy to use and the only way I will cook my chicken now! I meal prep weekly and this allows me to bulk cook easily. Clips nicely on a stock pot or instapot insert and does everything as advertised! Not in love with the price point, but for ease of use, dependable cook time and temp it was a solid investment.

Immediately short circuited
Very poor. Ordered this as my mother has difficulty eating many foods and this was suggested as a possible way to cook things she could eat. Had to use an adapter as it has a non-UK plug. Upon turning it on at the wall, immediately shorted and blew the fuse in the adapter.
