Is the coupler straight thru or crossover? Are there any attenuation issues when using the coupler?

This is straight through coupler. i haven’t encountered any attenuation issues, but my run is less than 100ft.

Would this be a good choice for passing cat5e cable through a metal building wall?

It would be a very strange use for this connector. When in use, this connector just be hanging loose with no way to secure it. The 2 Cat-5 wires normally would come together and meet in the center of this connector, that means this connector would have to be installed in the middle of the metal wall. If installed that way, I am not sure how you would reach the center connector. Depending on the wall's thickness and construction, this connector would be either sticking out on both side of the wall, or hidden in the wall, and hanging loose. I would suggest using some 2-sided waterproof grommet or conduit through the metal wall to protect the wires from damage.

What size cap can I use? Config idea is cat6 cable with connector, plugged into one side of the coupler, and then cap to cover until I connect?

Easy, just insert a short 1-2” stub of a CAT cable into the remaining cap, then tighten the compression fitting to seal the hole, and leave it until you are ready to use it. This will keep out any moisture or critters.
