How do you use it specifically if to make a ganache or a curd ?

You can’t use this to make ganache or a curd. You need fresh fruit to make a curd. You could maybe add to a ganache as a topping but it is crunchy and hard so could not be smoothed if in a a ganache

Not actual passion fruit pieces

I got this to make chocolate truffles as I have done with freeze dried raspberries but it is more of a topper for cereal. Having said that the flavour is good and it did work to make passion fruit flavour truffles
