Q: Anyone used commercially canned tomatoes with this mix? Results?

I use petite dice tomatoes and medium salsa mix. I had just canned some 2 weeks ago and a couple of friends popped in so I grabbed a bag of chips and a pint of salsa and they both said it was the best salsa they ever ate. Both ordered Mrs Wages medium salsa mix and are coming over to learn how to water bath can. This turns out better than any commercial salsa I ever found.

Q: Does the package have a long expiration date typically?

If you are meaning before it is opened, yes... nearly two years. If you are meaning after it is prepared... canned or frozen, it should be used within a year (ours NEVER lasts this long...DELICIOUS!!!) Simply refrigerated...probably a week or so. Again...we consume any opened. FABULOUS!

Q: Do I have to water bath or can I use a steam canner and how long do I need to process the jars?

Cover the jars with at least 1-inch of water. Bring to a rolling boil and process for 15 minutes (20 minutes for altitudes 1000 to 6000 ft, 25 minutes above 6000 ft). Then turn off heat and let the jars sit in the hot water for 5 minutes.

Ingredients of the Mild: dehydrated vegetables (onion, green bell pepper, chili pepper, red bell pepper, garlic), salt, spice (includes paprika). Ingredients of the Medium: dehydrated vegetables (onion, green bell pepper, jalapeno pepper, chili pepper, garlic), salt, spices. The medium has Jalapeno Peppers and chili peppers. The mild only contains the chili pepper not the jalapeno.
