Do these work with a P10 headgear?

Yes, they do. I started with a P10, but switched to N30. My DME supplier just swapped out my unopened P10 nasal pillows for N30 nasal cushions. Easy peasy. Same frame and headgear are used for both masks.

Is the N30 mask a pillow setting or nasal setting for the RESMED Airsense 11?

It is a Pillow setting because the N30 has a cradle cushion with nostril holes similar to pillows but without the prongs.
