Made a Great Keto Waffle!
Like other reviews stated, you have to add more water to the ingredients to make the mix less thick before pouring into your waffle maker. Other than that, this made a nice big waffle in my 7-inch waffle maker. I thought the flavor was great. My mom, who isn't on keto, tasted a piece and said it was a bit grainy, but I know that's because of the almond flour. Because of keto, I've gotten used to the grittiness of foods that contain almond flour, so it doesn't bother me at all. I think this is as close to a "real" waffle as you can get. The waffle didn't stick to my waffle maker like some other people have experienced. My waffle maker has a Teflon coating though, which I believe makes a big difference. I didn't even need to spray the inside of the waffle maker. I'd also like to note that I added some blueberries to my waffle and it came out soooo good. I highly recommend this and Lakanto Maple flavored syrup as great keto options. Just be sure to watch your portions, because consuming one entire waffle will account for a large amount of net carbs.

DELICIOUS
I rarely leave reviews, but I decided to this time because I almost didn't purchase this pancake mix because of the bad reviews. I am trying to reduce my carb and sugar intake so I've been experimenting with different products and recipes. These pancakes were absolutely delicious! BUT...I did not go by the directions. As you can see in my pictures, I substituted unsweetened vanilla almond milk in place of the water. I also added 2 eggs. I made about 8 pancakes with 1 1/3 cup mix and 1 cup of the almond milk. They did not crumble or fall apart. They were not gritty. They were just like normal pancakes made with flour. I also added a lot of banana split flavor made by Jordan's Skinny Syrups. They have numerous flavors that are zero calorie, zero carb, and zero sugar, but I wanted banana pancakes without all the sugar of real bananas. I did not measure how much flavor I used but it did make my pancakes thinner. If you want them thicker and want to use a skinny syrup, just use a little less milk. Last time I made these pancakes they were thicker because I hadn't discovered Jordan's delicious syrups yet, so I just added a lot of Stevia and some liquid Truvia vanilla. I promise you that if you substitute the almond milk for the water, add egg and either Stevia or Jordan's Skinny Syrups you won't be disappointed! These pancakes will taste exactly like the ones full of carbs and sugar! I have never watched my weight and I LOVE sweets, so learning recently that I was prediabetic was hard and depressing for me! I'm so thankful I can still eat delicious pancakes thanks to Birch Benders Keto mix and Jordan's Skinny Syrups, which you can also find on Amazon. They can be used in desserts, coffee, my keto Slimfast shakes etc.

Delicious and easy pancake mix
Being on a keto diet, sometimes you want something normal, like pancakes. This is perfect for that. The taste is good, the ingredients are decent and the price is fair. The texture is slightly different from a normal pancake. But it is still delicious. They are gluten free. You can also make waffles. BOGO!

Great way to start the day!
While the texture is ever so slightly gritty, and they aren't sweet, or quite as fluffy as a typical pancake mix, I can eat pancakes and waffles again! I'm gluten intolerant and before knowing that I remember as a kid I always wondered why I felt sick after pancakes. I can eat these and feel powered up for the day, and they are delicious with a light drizzle of syrup and fresh fruit. My husband doesn't like them as much as the regular kind but he will eat them and we both actually feel healthy and energized after a pancake breakfast!

Recipe Change 2022
I have been using Birch Benders Keto pancake/waffle mix regularly since around 2019. I liked the old recipe because when made into waffles it had the gritty texture and something close to the taste of cornbread. I would make the whole bag (with 1.75 cups of water and 3 tbsp of oil) and keep them in the fridge to use in place of bread. Other than the high cost, it was ideal - not too high in fiber, no sugar alcohols, tasted good, and was easy to pair with almost anything. I was in the habit of reordering from this 3-pack listing without checking it first and was surprised to see the recipe change so drastically from my last order. I've attached a photo with both the old and the new versions' ingredients and nutrition side-by-side for easier comparison. As we can see, the new version has almost twice as much fiber and a significant amount of sugar alcohols per serving. It also has a slightly higher net carb count, less fat, and slightly fewer calories. I made up a bag of the new version as waffles as I would normally do. I found that the batter had a much more rubbery texture than the old version. During the cooking process, the waffles got dark brown much more quickly than the old recipe would. They did hold together much better but had a strange unpleasant almost plastic-y smell where they got over-browned. They did cool and reheat well (in the microwave) though and smelled much better after reheating. I suspect they would freeze well also. As for taste and texture when eating, I would say that the new version is definitely an improvement if a simulation of a standard high-carb waffle is what you're after. The taste is neutral other than a slight bitter chemical aftertaste. They're slightly sweet, but not too sweet. I didn't notice any obvious erythritol cooling effect. The texture is much softer and fluffier than the old version. It's not gritty at all and comes very close to the texture of a regular Belgian waffle. They work a lot better with syrup and sweet stuff than the old version did. I'd recommend the new recipe for people who want a traditional waffle/pancake mix, aren't sensitive to sugar alcohols, and who need more fiber in their diet. Unfortunately for me, the new recipe isn't going to work out for me both because I'd bought this as a cornbread substitute and because my digestive system doesn't like the excess fiber and erythritol. So, I'm dropping my rating from 4-stars to 3-stars. The new recipe will definitely work for some people better than the old one, but it's not for me.

These are good and if your doing keto.....great!
I have tried their paleo brand and these. What people are calling grainy, to me , they taste like corn meal. Since I was raised on a farm and my mom often made pancakes with corn, I am used to that taste, its like if you could make corn bread into a pancake kinda thing. I don't mind them at all. I couldn't get mine to stay together. I have to learn the right consistency, I think you need to make them on the thicker side for them to not fall apart as I tried a couple for my son (he did not like them but he is super picky) the thing I noticed with making them thicker for his was , there is a fine line to getting the middle done without the outside burning. even though mine were a crumbly mess I put the butter on melted and my SF syrup and ate the whole thing. Yum!

Awesome pancakes even if a little gritty
I buy a lot from Amazon and I rarely review anything, but this pancake mix was just so good, I had to review it. I've been on a Keto diet for 6 weeks now. I measure my glucose and blood ketones every morning. The pancakes I made including some sugar-free syrup had no negative effect on my ketosis. And the pancakes were so easy to make. Just add water and whisk for a bit. My girlfriend who is not on a Keto diet thought they tasted fine. I would say they're 90% as good as any normal pancakes. Yes, they are a little gritty, but that's probably just the almond flour, which is fine with me, because frankly, I'm just grateful to be able to eat pancakes on a Keto diet! Only negative I can think of is that they tend to fall apart when transferring from one plate to another if you use a fork instead of a spatula. It's not that big a deal though.

If you're a stickler for consistency/ texture do not buy this
UPDAT: 5-18-22 I've used both the Paleo and the keto of this brand of pancake mix. of the two paleo works best for me. the keto version was very gritty. Now I am going to say that having never used it before? there could have been a little user inexperience going on there. I Fully admit that. I had tried the keto pancakes first. Then I tried the Paleo mix and it really did well. I've got to say I really like the Paleo mix. So I think if you buy this? Don't expect miracles initially, use it a few times. make several batches of pancakes over a period of time because I do think that experience will improve the quality of end product ( PANCAKES ๐WAFFLES). I do think it is a good product. As I stated, I prefer the Paleo version But I figure if you were looking for a good priced keto product? if you can get past the consistency and/or gain the experience on how to properly make these? then you will be happy with it. in fact I'm going to knock it up a star. Cheers! Previous review: Well I bought this cuz I'm looking to start the keto diet. I wanted to make pancakes on my own. Positive? it doesn't taste bad. That's about all I can say for it. I mean it does sort of cook up quickly and well. but the color? you can't tell if it's done or not. The absolute worst thing about this mix? it's like eating sand pancakes. If you're a stickler for consistency and texture do not buy this mix. you will regret it and you will waste money. Truthfully they're not horrible. but the rest of that pack went into a mason jar with a very tight lid, labeled and in my deep freeze. if I'm ever in a desperate situation for pancakes and I have NOTHING else to make them? I'll go get The jar out of the deep freeze and whip up some pancakes. It would be my absolute last resort. If I'm THAT hungry? I got more things to worry about than the consistency of this mix. You dig what I'm saying? And that there's my opinion. It just occurred to me as I was trying to review this before sending it off to Amazon. if you like pecan sandy cookies? You wouldn't have too much problem with this mix.
