Does this model make a scretching sound &/or gun shots?

No it does not irked for a couple of days and now i have them for deco

How sensitive are these? I have an indoor cat and there are probably 100 yards away from the side door we use/the house. Will this upset my cat?

No it will not upset your cat because he's indoors and he's not on yard setting up sensor, but any other ground creatures will set up the sensors and they will spook out of your yard.
