What rod matches the color of this Stryker green reel? Looks like a rod of the same color in the 2nd picture but can't find anything

Not sure. I don't try to match rods and reels by color, but rather by need.

What size would be the most ideal for salmon and steelhead?

The size 2000 would be fine; however, this reel's gear ratio is too slow for river fishing. I'd suggest the Valiant Eagle series in size 2000. The Valiant Eagle series has a much faster gear ratio; therefore, it is more suitable for river fishing in my experience.

I noticed the blue one (spindrift) has a higher line capacity and is IPX5 waterproof over the green one. Ate these 2 different reels?

I believe they are the same reel, just different colors, both are the 3000.
