What is the minimum gap I can get between the door and the wall? I have a small entry and want to maximize entry width.

Depend on how it is mounted, if wounted on the wall you will need 3.75 inch, if mounted on the floor you will need 2 inches

It would be nice if the seller added a photo with the dimensions of all pieces so customers don't have to return the item if it doesn't fit?
