Ancho are dried Poblano peppers, and are considerably milder than Jalapeño peppers they are known for their sweet smoky flavor with a rasin like texture. Ancho (dried) or Poblanos (fresh) range from 1,000 – 1,500 SHU in the mild pepper zone.
