Mercer Culinary M23810 Millennia Black Handle, 6-Inch Wide, Boning Knife

I received this knife yesterday, and am very happy ( but BE CAREFUL, it's SHARP). Nice weight, great feel, very sharp. I cut a watermelon, a cantaloupe, and a lemon (I normally only use my special small knife to cut lemons and limes) and it was impressive for all 3.

Boy oh Boy, this is one sharp knife infact it's so sharp I was a little scared and overly cautious while using it, because it could slice off a finger without very little effort. So if you want a sharp knife that really gets the job done this is the one. I'll follow up in six months to let buyers know how long it stayed sharp.

Great knife for the price. Keeps it's edge really well, and the handle is just a little textured for a solid grip. The handle is exactly the right size for my hand (6' female). If your a large guy, this handle is likely to be in the small side. I'm buying one for all 3 adult kids for Christmas.

The knife is comfortable in your hand. Has grip on handle for when you hand is wet. It does sharpen well, but needs to be honed frequently to remain sharp.

This is a great all purpose kitchen knife. I can go from cutting veggies to carving a chicken. Sturdy blade with little flex. Holds an edge well.

I purchased the 6" boning knife. It is razor sharp and works great for trimming whole brisket, pork shoulder and spare ribs. After I smoked these cuts the knife was perfect for slicing the meats into the final servings. I'm very happy with this knife and highly it.
