Why would this not work for drawers made of wood thicker than 5/8? It's overkill but I have leftover 3/4-1" that I want to build some drawers with.

The space between the runner and the vertical part that attaches the slide to the cabinet side is only wide enough to accommodate 5/8" material. Blum does make the same slide that is for maximum 3/4" material, part number 563F5330B. Hope that helps!

Are these the right slides for 24" cabinet depths using 1/2" sides, 3/4" face, frameless cabinets?

Yes, these are designed for standard 24" cabinets, frameless or face frame. The slides need 21-5/8" of inside cabinet depth to work so as long as you have at least that much you are good to use these! The 563H slides are designed so maximum 5/8" drawer box sides (1/2" or 5/8").
