When you switch this on, should read zero, and not 17.2 %C like mine does, I’m confused

If it always reads 17.2...even if you are standing outside then you have a fault. The reason it is not reading 0 is the air temperature is probably not 0. It will instantly read the air temperature when switched on.

does probe cover resist in the high heat like 300 F to be dipped in the hot boiling sugar syrup while clipped on the pot? thanks

Probe cover must be removed during use. It will melt 300° You will not get an accurate reading if you leave the probe cover on.
