How many boxes come with this? How many pop tarts in each box? The listing is unclear.

This is for 12 boxes of pastries, with each box containing 4 packs of 2. You will receive a total of 96 pastries. I hope this helps!

Does this product have gelatin since others do

This product does not contain gelatin.

Is this 8 boxes of 8 pastries each?

This order comes with 8 boxes containing 4 packages of 2 pastries per box for a total of 64 pastries.

How long can these be frozen for?

It depends on whether or not you want to eat them afterwards. Google search says, "The fact that Pop-Tarts have such a long shelf life when stored in the pantry makes freezing unopened packets of Pop-Tarts insignificant from a practical standpoint." It also suggests that they're fine for 6 to 12 months after the "best by" date.
