what is the weight needed to use for making 250 grams of 8% protein soyjuice into tofu flower?

I would estimate maybe 0.3 grams at first and then use more if needed.  We make tofu flower on a large scale, around 50 gallons at a time so it's sort of hard to say exactly.  Also, our soy milk is not going to be identical.  Just try to use as little as possible at first and slowly use more. If too much is used, you'll taste a slightly sour flavor.  If too little is used, coagulation won't be enough.  Hope this helps.

Can you use this in cosmetics, such as hair refresher spray?

I have read online that some people do use it for that purpose.  I personally don't have any experience with that, but if your cosmetic recipe calls for glucono delta lactone, then this is it.  It is in pure form, so that's the only ingredient in it.  Sorry I wish I knew more about it, hope that sort of helps!

Do i boil the tofu flour to water then mix the coagulant or im wrong please explain

Hi,  first you make your home made soy milk from the soybeans.  After you strain the soy milk, bring it back to around 180 degrees Fahrenheit and turn the burner off.  Dissolve the tofu coagulant in some water and then mix the coagulant water into the hot soy milk.  Do not over mix.  Just mix it enough and then let it sit for at least 10 minutes to coagulate.  Also, make sure that you make your soy milk thick enough (enough beans to the amount of water) or else the soy milk will not coagulate correctly to make tofu.
