Perfect value chef's knife
Out of the box this was definitely sharp enough for 90% of people. Could a high end knife sharpened by someone who knows what they're doing get sharper? Of course, but when these are on sale they're a perfect option for those of us without the cash or inclination to buy and maintain expensive knives. It holds an edge pretty well, and sharpens nicely. The large handle size is great for people with large hands, and even when wet it does not slip in your hand unlike most knives I have so definitely something you can use with confidence without worrying about slipping and cutting yourself. It has been one of my two workhorse knives in the kitchen since I bought it, and I can see it remaining that way for quite some time.

The 20cm blade is professional-grade and arrives with a razor-sharp edge that holds up remarkably well. Because it’s the extra-broad version, I have plenty of knuckle clearance on the board, and it makes light work of large vegetables like butternut squash or cabbage. The Fibrox-style handle provides a very secure, non-slip grip even when wet. It’s a five-star, high-quality essential that has quickly become the most-used tool in my kitchen!

Possibly the best chef's knife for the serious cook
I'm a big fan of the Victorinox knives; I like their ergonomic, high-friction, plastic handles. I like the sharpness and edge-retention. I like the sheer size of the knife. I like the balance and ease with which it rocks on your board, whether you're chopping parsley or cutting up butternut squash. Although this is harder-wearing than the very high-carbon knives, if you to clean it, dry it and put it away in a block or sleeve after use, and it should give you a lifetime of service.

Perfectly decent knife
I dropped my lovely sabatier chefs knife and it smashed in two. Didnt feel like spending that much money, plus wanted something i could safely put in the dishwasher. a chef friend recommended vittorinox as a good sturdy beginners knife. this was a good price. handle is fine to use, the deep blade has pros/cons but i am overall happy with the knife. the edge is perhaps not as razor sharp as some, but it cuts just about everything easily (struggles with squashes and sweet potato). Its a pleasure to use and keeps its sharpness well. Doesnt suffer from being in the dishwasher. Overall i am satisfied with this knife and would definitely buy it again. Its not as nice as my sabatier, but is much cheaper and i think better value.

Fantastic for the price
For those wondering, this knife is model number 5.2063.20, in case you wanted to look around the web for professional reviews and the like. It is exactly the same as the old 40520 model, which was rated "Best Overall" by Cooks Illustrated in the US and is the top-rated item on the whole of the Amazon US site at the time of writing, so head over there if you want hundreds of other reviews and a more extensive product description. Personally, I think this is a fantastic knife, and for this money it is simply a must-buy. I've been using my flatmate's Globals for the past two years, but having moved house I needed to get my own set of knives. This knife compares very well to the 20cm Global chef's knife. It is very, very sharp and very comfortable in the hand. The handle is very sturdy and solid, and has a very easy to grip texture even when wet. It also feels very well balanced and was heavier than I expected; both very good things. If you are looking for a knife in the sub-£100 range I'd say get one of these and spend the rest of the hundred on a couple of other Victorinoxes. You won't be disappointed.

Stop looking for the right knife - you've found it.
As a novice cook, I recently purchased this knife having spent considerable time considering the alternatives. I eventually decided to go for this knife on the strength of its reviews - particularly having seen many reviewers comparing this extremely cheap knife with their top-end (£200+) chef's knives. I was not disappointed. This knife is head and shoulders above any I have used before. I didn't realise how effortless chopping food could actually be. The knife glides through onions and potatoes with zero resistance and - although I have relatively little skill with a knife - I am instantly able to chop and slice much finer, much quicker and much more comfortably than before. The Fibrox handle looks dull and cheap in images but is actually a very good quality, comfortable composite that is light but very solid. From reading the reviews, it seems that there is actually a variety of slightly different knives that are sold under this listing from different sellers (some with the cheaper, non-Fibrox "classic" handles). The knife in the image is the acclaimed 5.2063.20 (40520), which is the model that I received so - if you want the knife that's advertised - try and get it from the same seller I did (Nisbet's). Highly impressed.

⭐⭐⭐⭐⭐ Allround-Kochmesser mit Profi-Qualität zum fairen Preis
Das Victorinox 5.2063.20 ist mittlerweile mein meistgenutztes Messer in der Küche – und das völlig zu Recht. Schon beim ersten Anfassen fällt der rutschfeste Fibrox-Griff positiv auf. Das Messer liegt sehr sicher in der Hand, selbst bei nassen oder fettigen Händen, was besonders beim zügigen Arbeiten wichtig ist. Das Gewicht ist gut ausbalanciert, nicht zu schwer, aber auch nicht zu leicht. Die 20 cm lange Klinge aus rostfreiem Stahl ist ab Werk extrem scharf und schneidet mühelos durch Fleisch, Gemüse und Kräuter. Besonders beeindruckt mich, wie fein man damit schneiden kann, ohne viel Druck auszuüben. Ob feine Zwiebelscheiben, Kräuter hacken oder Fleisch parieren – das Messer bleibt präzise. Auch nach mehreren Wochen täglicher Nutzung bleibt die Schärfe überraschend lange erhalten. Zwischendurch ziehe ich es leicht mit dem Wetzstahl ab, das reicht völlig aus. Die Reinigung ist einfach: Das Messer darf theoretisch in die Spülmaschine, ich würde zur Handwäsche raten, um die Schärfe und den Griff zu schonen. Mein Fazit: Ein echter Allrounder, der in keiner Küche fehlen sollte. Robust, extrem scharf, pflegeleicht – und dabei deutlich günstiger als viele Profi-Messer. Absolute Empfehlung für alle, die ein verlässliches, vielseitiges Kochmesser suchen.
