Most of the molcajetes are made of volcanic rock (think "lava rock" for your grill) and I would think they would be difficult if not impossible to clean. The food debris that fills the pores are said to "continue to provide the traditional flavor". No thank you on old food debris, especially if this is only used as a mortar and pestle. Old guacamole in the nooks and crannies does nothing for me (and could THAT be the cause of Montezuma's revenge? I ordered the granite for a smooth surface that is cleanable. None of these molcajetes advertise using them to serve hot food, which was the inspiring use that I saw in central Mexico. You heat them in the oven while you are grilling meats and veggies, fill it with hot green chile sauce (or whatever is your favorite), drape the strips of meats and veggies on the sides, and serve the whole steaming thing - almost like fajitas - with flour tortillas. And a margarita! Hint: get a cheap wooden cutting board to keep under this on your table or countertop - being granite it could damage anything you might bump it against, and of course, if it comes out of a 400 degree oven it might scorch your table top.
