I store sourdough starter in mason jars ns it sometimes develops dark hooch ns i have stet over . would these help my situation?

These lids won't keep the sourdough from getting a layer of liquid on top. I have used sourdough for years. There is always a liquid layer that forms. If it isn't dark just stir it all in before using the sourdough batter. If it gets dark pour off the liquid and then use your sourdough. It gets dark when not used and fed enough. Be sure to add flour to feed the starter at least every two weeks.

Do you still needs weights?

Yes, you still needs weights to keep the cabbage or veggies under the juice. These little things help making sauerkraut easy.

Where to buy the metal jar lids to hold the Airlock Lids to jars?

When you buy mason jars, they come with metal lids and locking rings. Replace the metal lid with the Pickle Pipe while fermenting (~3 or 4 weeks). When the process is done to your liking (ie taste), remove the Pickle Pipe and replace with the metal lid that came with the jar. Refrigerate. Veggies should be good for up to 6 months (fermentation continues slowly, so over time, the taste gets stronger. Search for Wide Mouth Mason Jars on Amazon, and you'll see the lids and rings.

How much space do i need to leave at the top of the jar so it doesn’t overflow. my first one overflowed but i think i may have filled it too much. tha
