How much weight can the canopy handle? Can I hang plants without making the rods bow?

They are pretty sturdy I haven't tried anything like that.

Will this hold the 12-in mattress?

Yes. My mattress is 14" and it fits perfectly with about 4" showing above the top of the footboard. A 12" mattress will probably show about 2" above the footboard.
