it's very salty so If you want to kick the flavor up a notch do NOT be tempted to add more than 1 tbsp per pound. Supplement with extra sage instead. I also add red pepper flakes to spice it up a little more.

This is fool proof. You can buy a pack of ground pork and make 1 pound at a time if you like. Great flavor without all the extra salt.

This is the secret to the best Boston butts, ribs, loins, or chicken and turkey. A little to bright for beef or lamb in my opinion. I buy pork butts and shoulders when they are on sale. My wife then breaks them down and grind them for breakfast and sweet Italian sausage. A tablespoon per pound is perfect for our tastes. We usually get 8-9 pounds of breakfast sausage for a dollar a pound verses the usual $5-6 a pound for grocery sausage. Plus, there is nothing in the sausage except pork and seasonings. There are no ingredients you can't pronounce. Another plus is that after frying there is literally no grease to drain. Plus, taste of the sausage is excellent. I highly recommend.
