These are my go to pancakes after being diagnosed with celiac and being sad that I can no longer eat, buttermilk pancakes that taste like buttermilk pancakes, I went on a quest to find a pancake that could supplement my buttermilk fix. This is a corn cake. And I’m happy with it. It’s sweet fluffy delicious just how I want my corn cakes. They taste amazing with bacon.

I love this corn cake mix. It works really well in my waffle maker. Yes it is sweet, but I don’t add any sugar to it. It is delicious with butter and blueberries.

Quite delicious, but difficult to cook. They must fry for much longer than regular pancakes and are difficult to flip. Any attempt to flip them too soon leads to very messy pancakes. However, it was worth the trouble.
