Mercer Culinary Genesis Flexibles Fillet Knife, 7-Inch , M20307, Black

I'm a bit of a knife snob. this knife if the real deal. feels good in the hand. It's well balanced and it's really sharp. I"'ve only used it a few times, las was to cut and bone chicken legs and thighs. This knife made it so easy... I have to admit that I was a little skeptical when this and the 3" paring knife arrived. I was very unimpressed with the packaging, it looked like something you buy at the grocery store. I figured I'd give them a try. I'm really glad I bought them. I have to get rid of my knife block and the knives in it are not very good. The brand is very good, but the quality of the knives was not impressive. I'll be checking out other sizes and styles of the Mercer brand. A word of caution, you could cut yourself very easily if you're not experienced in the kitchen. It's THAT sharp.

Muy buena calidad de cuchillos, creo que comprare mas tamaños y hacer mi colección de buenos cuchillos. El envío fue mas lento de lo esperado, mas sin embargo fue bueno.

As a chef, using it everyday for professional use, I have to say quality of the metal is not great. When you want to maintain a super sharp edge for precision cutting you need to keep sharpening it constantly. Doesn’t really hold its edge for very long. Maybe good for home use. Handle is awesome.

My go to knives...wish I had seen these sooner at a more reasonable price

No tiene un súper filazo, de hecho venía sin filo, hay que pasarlo por la chaira, pero sí es flexible y ayuda a rebanar. Me parece caro para tener que estar pasándolo por la chaira de nuevo.
