I found ingredients listed as unsweetened chocolate, sugar, cocoa butter, soy lecithin (an emulsifier), natural vanilla flavor. Not sure how this is not vegan - maybe how the sugar or lecithin is processed?

It does not, however it might have been made in a factory that handles nuts/peanuts. I have been using their products for years and their chocolate is wonderful

What is the difference between this and the 54%. Is one sweeter? I'm looking for a medium cocoa eating dark chocolate. Sweeter is better.

This is for baking, not eating. For that, you don't need a multi kilo log. You should be shopping for smaller bars in bulk, perhaps. There are better brands for eating than this. Most American chefs who are looking to save money use Guitard. Valhrona is what the pros prefer. If you like dark chocolate, 60 percent is probably a better bet. 70 is for combining with milk, again, for candies, baked goods. This is what hotels and caterers buy, but never is served on a plate. They prefer this because when it's cut with a knife it blends better than callets, pellets, chips etc. It incorporates well in baking. For eating, you should eat less.
