Real taste, firm.
I'm a cheese snob. I buy my "swiss" from Switzerland. I buy my colby ONLY from Shullsburg. This is NOT like packaged supermarket cheese - it has a distinct flavor that's not sharp but IS DISTINCT. Body is firm approaching crumbly yet NOT falling apart. NOT greasy. NOT rubbery. NOT flavorless. A 6 lb. horn is big for a single person so I DO freeze segments . . . thawed cheese MAY be a LITTLE more crumbly - but I LIKE it thawed every bit as well as fresh. YMMV. Long time buyer. Always ships in a cooler - a mark of a seller who cares. Rates MORE than 5 stars.

Colby cheese is very hard to find in the stores. I cut it in pieces and put in my freezer so it is ready when I need it. It arrived cold and wrapped well..
