What is the shelf life of the product after opened?

Hi. Shelf life is around 3 years. You just need to make sure to close off the bag till it’s air tight or put it in an airtight container after opening.

How much nigari do I need to use for 4 cups of soy milk

I would say use around 3/4 tsp at first. Then use more on future attempts if the coagulation wasn't enough. Also, I have to stress that the thickness of the soymilk is critical and temperature. Thickness should be at around 14 brix if you have a refractometer and temperature should be at 180 degrees Fahrenheit

What’s the ratio for store bought soy milk?

Hi. I would not recommend trying to make tofu with store bought soy milk. Store bought soy milk is too thin. The tofu will not coagulate correctly.

Figure about 2 teaspoon of nigari to a cup of warm water. Crush up the salts . 2 t of nigari salt to one and a half cup water . I like the extra water to get it to mix well, mix to 2q soya milk at least 180 degrees. But it depends on the water to milk mixture you use. Always mix an extra half cup of salts. Add the first cup and use wide spoon to stir in a wide circle to not fast but well, get it all circulated well. some people use way less water with the nigari. I like more. Best wishes,
