What is the difference between Baking Soda and Baking Powder?

Baking soda is 100% pure sodium bicarbonate. Baking powder is a mixture of baking soda (usually about 28-30%) and various acidic ingredients (singularly or in combination). Both are used as leavening agents in baked goods- baking soda will react with an acid, giving off carbon dioxide gas and causing dough to rise. However, they are used in different situations and are not interchangeable. Baking soda is typically used in a recipe that has an acidic ingredient (cream of tartar, buttermilk, etc.) that will react with the soda to give off carbon dioxide. Baking powder, which contains one or more acidic ingredients to facilitate the reaction, is used in recipes without acidic ingredients.

I have a Berber rug with old dog smell on it. Will this type of baking soda work for a base layer before cleaning ?

Baking Soda is Baking Soda is Baking Soda. As long as it is pure sodium bicarbonate with no additives, they are all the exact same thing. Baking soda (and borax powder) are commonly used to safely absorb odors and as natural cleaning products and have been for generations. Because this package is a shaker to apply the soda directly on areas to absorb odor, it is probably exactly what you need (you don't ever "shake" baking soda when you are using it in food preparations/actual baking). Carpet refresher powders are simply baking soda (and sometimes soda plus borax powder) with added fragrances, but they cost more. Be warned: baking soda is a very fine powder, and can clog your vacuum cleaner's filters. Also, if you plan to use steam or liquid cleaning method after applying odor absorbing powders, be sure to vacuum the rug/carpet until you can't stand vacuuming any longer; if you leave behind any measurable amount of the soda/powder, if mixed with moisture (steam or liquids) you can end up with a paste residue deep in the carpet fiber/backing which could cause damage eventually. Better to use only on throw rugs or area rugs that are sized in a configuration that they can be taken outdoors and beaten/shaked to remove as much powder as possible before steam/liquid cleaning. Use caution when applying to an installed/wall-to-wall carpeting with padding underneath.
