Would one need 2 of these for a full 8' panel?

No, 1 is fine for a full 8’ sheet.

How high does this lift it off the ground? Looking for 3 in.

The lift height is 2 inches. 3 inches is awful high for a piece of sheetrock. Most "stock" floor mold is 3 1/4 inches.
