what is the difference between a Brave 7 and a Brave 7 LE?

Several differences: 7 allows for external mic, LE does not. My LE came with a full hard case, the 7 comes with a frame only. Extra batteries are not available for the 7 (at least as of 5.9.2021). The batteries between the 7 and LE are not compatible. The LE has a brass thread base for direct attachment to mounts, tripods et cetera, the 7 REQUIRES the frame to mount to a tripod. The 7 is slightly larger.

Is the remote control waterproof?

No, the remote control is not waterproof.

Follow up on "what is the format for the videos and pictures that is captures?" is it .mp4/.mov/.avi for video. And j.peg/.wbcam for the pictures?

.mp4 and .LRV for video and .jpg for pictures.

Does it need to be in the case to mount to handlebara, chest harness or hear strap?

Yes you need the cage installed because it has the mounting legs attached to it in order to use any type of mounting hardware.
