Wow this book is great source of knowledge about meat, you can become master chef with it, I bought this as Xmas gift as I'm more veggie person but new owner is serious meat eater 😊

This is my go-to book when cooking any kind of meat. It even out-ranks Delia on my bookshelf (and that is no small achievement). Thoroughly covers all manner of meat preperation (including background information on an enourmous number of joints (no not THAT kind you hippy space cadet)). Indispensable.

It has more game thanmeat and poultry but a classic book for holiday cooking.
