You possible could if the ice cream was soft.

Q: How hard is the plastic? Might plan to use this to scoop out very solid coconut oil and pluck off a tablespoon from the side side.

It is pretty hard, works on stiffer cookie dough.

i think it would. I am not a good baker. I use it for Sausage balls and cookies. I love it.
