Not Japanese, but a sharp and durable budget competitor.
This 203mm (8in) Shan Zu chef knife from it’s Gyo Series, which is 67 layers of damascus “super steel” (10Cr15CoMoV) is a highly rated product that seems to be a real contender as a value Damascus chef knife. I recall the ad for this was that it had real layers of folded steel and was not just a pattern etched into the surface like some other faux-Japanese knives (that are made in China) do. What is laser etched is the name of the product, info, and series name. The balance point is right at the bolster, making it slightly back heavy if you are the type to pinch grip your spine when you chop. My first impression of the Damascus pattern is that it was almost too nice to be real Damascus; The pattern looked like an AI computer had designed it and made it look like a fingerprint tessellation with a mirror-finished zig-zag at the cutting edge. I do not see a primary bevel on this knife. It has a slight reverse tanto (or K-tip) angled tip, reminiscent of a Kiritsuke Gyuto. Perhaps added because of the more precise tip work that such a modification allows. The frosted G10 Fiberglass Handle with metal end cap is solid and feels hefty. The modern styling is very similar to the handles in Shun’s Sora line, which is not the most ergonomic grip there is. The singular rivet seems like gold foil plating since some of mine is flaking off on one side. But the important part…. This thing is very sharp and it seems to also back its performance up on the cutting board. Slicing through paper with ease and chopping the veggies I tested it on right out of the box, although, there was some stick-age of food on the side of the blade. Then there is box that it came in: The knife box has a magnetic flap enclosure and a black felt interior. It was dinged up on one side of the exterior due to the insufficient padding it had during shipment, but luckily this packaging had effectively kept the product from sustaining any damage. Overall, I think this Shan Zu Chef Knife is a versatile product that will serve its purpose in the kitchen well. It seems to be retaining a sharp edge so far, and I am prepared to sharpen it on my whetstones in the near future. Thinning it out in the distant future may be a challenge, but I have seen research done on the legitimacy of this product from content creators on YouTube (one literally found it’s extreme breaking point using a vice in a stress test) and am convinced that it will last the test of time. Although, I cannot say the same for the fiberglass grip (not being the most ergonomic and made of a material known to break down over time) and not to mention the flaky gold plated rivet, but I think the basic functionality of the knife has a good chance of survival.

Great knife set!
Mostly awesome. The large knife has two small dings on the edge but I ran a honing rod over it a couple times and it was good to go. Very sharp and comfortable to use.

Great knife - feels well balanced, far superior steel than Henckels etc because it’s a skosh lighter and keeps its edge way longer. Very good looking too with the true damascus - very happy.

Das Shan Zu Damast Küchenmesser ist jeden Cent wert! Schon beim Auspacken merkt man, dass hier Wert auf Qualität gelegt wird – die Verpackung ist edel und macht richtig Eindruck. Das Messer selbst liegt perfekt in der Hand, die Balance ist hervorragend und sorgt für ein angenehmes Schneidegefühl. Die Klinge ist extrem scharf und gleitet mühelos durch Fleisch, Gemüse oder Brot – ein echter Genuss beim Kochen. Man merkt sofort, dass hochwertige Materialien und präzise Verarbeitung im Vordergrund stehen. Für mich ist es nicht nur ein Küchenmesser, sondern ein Werkzeug, das Kochen auf ein neues Level hebt. Fazit: Wer ein langlebiges, scharfes und stilvolles Messer sucht, macht mit dem Shan Zu Damast Küchenmesser alles richtig. Klare Kaufempfehlung!

Très bon rapport qualité / prix
Très satisfait de mon achat ! En plus d’être un bel objet, agréable à regarder et éveillant la curiosité de mes amis, ce couteau est d’une facilité déconcertante dans son utilisation. Assez long, il est malgré tout bien balancé, agréable à prendre en main et facile à manier, ce qui le rend plutôt rassurant malgré son fort tranchant et son gabarit conséquent. Et parlons en du tranchant ! Quel plaisir pour couper viandes ou légumes ! On tranche tout (n’allez néanmoins pas l’utiliser pour des os ou autres parties très dures, il n’est pas fait pour cela et vous risquez d’endommager le fil) avec une facilité déconcertante. Pas besoin d’allers retours, une seule glisse nette suffit pour réaliser une coupe parfaite tout en gardant le contrôle sur l’épaisseur. La lame étant suffisamment large pour ne pas dévier de sa trajectoire initiale, on est surpris par la finesse des tranches qu’il est possible de réaliser. C’est un sans faute pour ce couteau au très bon apport qualité prix qui est vite devenu un outil indispensable de ma cuisine. Robuste il est parfaitement fini avec des petits détails très séduisants, notamment la calligraphie sur la lame ou encore le pictogramme apposé à l’arrière du manche. En outre, sa lame en acier Damascus aux sublimes dessins fait preuve d’un tranchant exemplaire. Un très bon investissement qui décuplera votre plaisir de faire la cuisine pour un prix malgré tout contenu.

Couteau chef et a légumes
Très bon couteau, bien équilibrée, avec un bon tranchant qui ne s'émousse pas rapidement. un simple passage au fusil en fonction de la fréquence d'utilisation suffit généralement a lui rendre sa superbe ce qui est tout a fait normal quelque soit le couteau. je ne peut pas affirmer qu'il s'agisse ou non d'un vrai acier damas, n'étant pas un spécialiste, mais en tout cas le couteau est esthétiquement superbe et remplie sa fonction première : il coupe super bien. Pour répondre aux différentes critiques de manières constructives : Il n'est pas mentionné dans l'annonce que le couteau est japonais, ont parle juste d'acier et de style japonais il est clairement noté que le couteau est chinois, il faut juste savoir lire !! De même ,les personnes qui se plaignent de la fragilité de la lame soit en coupant des os ou le rangeant dans un tiroir. il s'agit d'un acier très dur donc cassant. Il ne faut quand même pas abuser ce sont des couteaux destiné à émincer les légumes et trancher la viande pas a désosser et il doivent être stocker individuellement, sinon il ne faut pas ce plaindre qu'il n'y ait plus de tranchant!! C'est comme percer du béton avec un foret a bois et ce plaindre après qu'il est abimé, peut-être qu'avant de critiquer l'outil, il faudrait peut-être avoir un regard juste sur la façon dont on l'utilise !! Je précise que je n'ai aucune relation avec la marque, juste un gros raz le bol des commentaires sensés vous être utiles remplis de conneries.
