Premium Spanish Smoked Paprika Powder (1 x 175g) DOP - Best Quality Paprika is a spice made from air-dried fruits of the chili pepper family of the species Capsicum annuum. Originating in central Mexico it was brought to Spain in the 16th century. The seasoning is also used to add colour and flavour to many types of dishes. Spain now being the favourite, and most tastiest, best Paprika available on the market today. In Spanish, paprika has been known as pimentón since the 16th century, when it became a typical ingredient of the western region of Extremadura. Paprika ranges from mild to hot but almost all plants grown produce the sweet variety. Sweet paprika is mostly composed of the pericarp, with more than half of the seeds removed, whereas hot paprika contains some seeds, placentas, calyces, and stalks. The PeppersIn order to make our Smoked Paprika Powder, all varieties, we only choose the very best of peppers from the "La Vera" region of Spain. The crop begins in the Winter when the seeds are planted, later during May when the plants have now grown, the seedlings are moved to the fields to complete their growing. The varieties of peppers used are "Jaranda", "Jariza" and "Bola". The DryingThe ripe fruits are collected, sorted, and cleaned during the months of October and November. The fruits are then transferred straight to the smoker for drying. The peppers are still smoke dried in the traditional way using holm oak, the process lasts for about 15 days. The MillingThe Milling of the dried smoked peppers is also still done in the traditional way. We use eight blocks of two granite stones. The stones work by rubbing against each other and the dried peppers are passed through these two stones. The peppers are ground to the optimal grade.
