I own several Tojiro and purchased the 10.5" slicer. My wife is an anti-knife-ite and frequently puts knives in dishwasher, hacks through lamb chops, opens cans, removes drywall, chops up gravel, etc. Unfortunately, no knife can withstand her abuse and I have to hone, sharpen, and strop often. She agreed not to use the more expensive SG2 knives and only uses these. The most important properties are 1) material: VG-10 one of the best materials for knives. 2) Shape - this is a large slicer for slicing large roasts (not used often, but filled a gap). 3) Construction - while this knife has the important features like full tang and smooth finish / few gaps for bacteria to breed, it doesn't have the extras like dimples or decorative etching.VG-10 can be sharpened to an incredible edge and holds it much longer than German steel, but it is more brittle. If you are a knife-abuser, stick with the German stuff as brittle can chip and then you wasted your money. When I sharpen, the edge comes back to razor-sharp. When it arrived, I was surprised at the edge's sharpness. The hair seemed to fly from my arm when I tested it.If you are looking for a economical, no frills, high quality knife, it'll be hard to find a better choice.

Spine is thick and rough surface.
Pretty good knife and handle grip is good. But spine is way thicker than I thought and not very smooth surface of spine. If you it long time then your hands might get hurt. Overall 8 out of 10.
