Do these stop the joysticks capasative touch for gyro?

Yes, this will. Etsy has some joystick rings you can buy that just give grip on the outer edge while keeping the gyro sensors accessible. look up joygrips on the site and you should find them.

Will these work on the Nintendo Switch?

Definitely not on the joy cons, but good news! They make the same product in that size.

when the stick grips are equipped, will it fit in the standard Steam Deck case?

I have the thumbgrips on at all times PLUS a handheld grip for the entire deck and itll still fit inside the stock case.
