Excellent size
I wanted a smaller chefs style blade and this fits the bill. Perfect. I took a pic of the 6 and 8 inch together. And another pic with the steel and santoku.

Nice General Purpose Kitchen Knife
This knife is well balanced, feels good in the hand and quite sharp. Good for all around kitchen tasks, dicing, chopping etc. It appears to be well manufactured.

Nice size for smaller hands!
I am the type of person who would use a paring knife for everything! I actually saw a chef do that on Top Chef and the judges were like so shocked that he could do nearly everything with it. I just feel more in control of a smaller knife. Still, some bigger jobs do demand a bigger knife. I have a really nice Shun chef's knife and sometimes use it, but mostly just for cutting bigger pieces of meat. I also have a fantastic ceramic knife, but I chipped it. This is a great, substantial feeling knife, but it isn't as long as a typical chef's knife. I like that! The Shun one I have is 8 inches long, but feels thinner. This blade seems a little more chunky, but cuts really well. I just used it to prepare easter dinner and cut up the whole ham afterwards with it. No problems going through meat, potatoes, veggies, even a whole cabbage. I kept the cardboard sleeve it came in to store it in the drawer (I wish it were a wood sleeve, though!) Overall, I find myself reaching for it often. Any time a paring knife (I use a Wusthof one that I love!) is too small, I go for this. I still have my big one, but save that for really big jobs. This is a nice goldilocks type of one that isn't too big, and isn't too small!

My new Favorite knife! Great quality, Very Sharp
The All-Clad Forged Steel Chef Knife is my new favorite knife! Our kitchen has a large collection of knives from pairing knives to large chef knives to a couple knives too large to use on anything but large squashes or watermelons. I keep most of them pretty sharp, but the All-Clad knife is the only one besides my fillet knife that is so sharp they demand extra caution when using them. We have a couple All-Clad pans that we use almost everyday, so we know the great quality of All-Clad products. I'm thrilled to own an All-Clad kitchen knife. It is the only knife we have that has a handle with enough vertical clearance from the blade edge so that I can chop and mince quickly and easily. All-Clad claims this knife will stay sharp. My kitchen should be a challenging test bed of that claim. I'll update my review after a few months of use.

Global knives are still better, but these are very good/sharp
You can't go wrong with all clad knives, but global knives are still much better. These are heavier than global knives, but they are just as sharp. Time will tell if these hold up as well as global's knives, but nothing a quick sharpen can't fix. I've been using global knives for over 10 years and I've only sharpened it once. With other knives, they dull out fairly quickly. These come boxed nicely, so they could double as a present for others. If you're looking for a good knife set, then go with all-clad, all their stuff is top notch.

Great quality!
I love my new All Clad knife. All of my old knives are so dull compared to this one. The All Clad cuts through smoothly with it's super sharp blade. The weight feels great in my hand. It's not too light or heavy, just a perfect grip for my small hands. It's important to be careful when using a sharp blade to be very careful not get yourself cut. I wear protective gloves when I slice in the kitchen. This knife is so sharp that when I was hand washing it with a sponge it cut up the sponge I was using. The knife did come with washing instructions though the box said instruction were inside. I just take the same proper precautions I always take with knives. I hand wash them right away and dry them right after so they stay dry and sharp.

Great all around kitchen knife!
The All-Clad 6" Forged Steel Chef Knife has become my favorite kitchen knife. I was previously using a Victorinox Fibrox 8" chef knife which is also a great knife, but I can't seem to put this All-Clad knife down. The quality of the all-clad is much better. It feels very good in hand and I much prefer the 6" to the 8" I was using. It comes very sharp out of the box and due to the nature of this steel, I doubt I will have to sharpen it nearly as much as my vic. I really love the look of this knife as well. I really think this is an awesome knife and I have nothing negative to say about it. This is a good value in my opinion. I will certainly be purchasing more all-clad knives in the future.

X50CrMoV15 stainless steel
This All-clad chef knife is made from X50CrMoV15 stainless steel, which contains the following additional alloy elements: Steel composition: 0,5% carbon, 14-15% chromium, 1% manganese, 0,5 - 1,0% silicon, 0,5-0,8% molybdenum, 0,1-0,2% vanadium. X50CrMoV15 steel is the alloy used by many well known German knife manufacturers including Wustoff and Schilling. It provides both high hardness and resistance to wear. At 58 on the Rockwell Hardness Scale, it falls slightly below the 60 rating typical of Japanese V10 steel with a higher carbon content, but provides superior corrosion resistance to the V10. The fit, finish, and balance of this knife are top notch. It has a good weight to it which helps with chopping vegetables. The six inch blade length makes it easy to manuever compared to 10 inch knives and perfect for meal preparation for a typical 2-4 person meal.
