Love, love love these recipes
I love America’s Test Kitchen cookbooks, so when I saw this I knew I had to have it. I love making sauces, but usually just make up my own. Since getting this cookbook, I’ve made two sauces—vindaloo (for sautéed chicken and brown rice), and red wine reduction (for pan fried pork chops and baby potatoes). I followed the recipes as closely as possible, and both turned out great. The key is to prep everything first (of course). Very flavorful and recipe instructions are easy to follow. Making tartar sauce next week to go with the oven baked crusted cod recipe in the cookbook. Each basic recipe also includes a number of variations. The cookbook is laid out well with a variety of food recipes to go with each sauce, so lots of options for a variety of meals and desserts.

Doesn’t try hard enough, but pretty good at what it does do
There is a flaw in the ATK recipe-centric approach to cooking — they simply are not set up to do a more systematic analysis of a specific culinary subject. They optimize recipes, they’re very good at it, but they tend to stop there. This book, impressive as it is, is a clear demonstration of this. While it isn’t an absolute must have, if you can grab it at a discount, it’s great to have around as an adjunct to your regular cookbook shelf, just to see what new perspectives you can bring to your food. As someone else pointed out, there’s no recipe for béchamel sauce in here. And, indeed, there’s no vélouté or French brown sauce either; while Hollandaise, mayo, and beurre blanc get decent coverage, the fact remains that ATK has never really covered the roux-based mother sauces in any kind of systematic fashion, and you can work your way through the whole book, use a roux multiple times, and still never find out what a roux is. The ten or so pages that it would have taken to talk about roux-based sauces would surely not have been a major problem to add. (And I’ve always wanted to see ATK take on demiglace — they’ve done so on occasion in an ad hoc way on the TV show, but never truly fully explored it.) That said, there’s still a lot to like in here. Simmer sauces, pan sauces, salad dressings, pesto, and even a take on plum sauce that’s very different from any duck sauce you’ve ever tried. The recipes for finished meals are sort of beside the point and really just serve to give you an answer to “now what?” Escoffier would consider this to be a bit underambitious, but it does serve its stated purpose.

A great companion for any way of eating
Whether you are keto, paleo, Mediterranean, vegetarian or a carboholic, this book will make everything better. Because A GREAT SAUCE MAKES SIMPLE FOOD TERRIFIC. I myself am an Atkins fan, and for us, sauces are a must. This is an essential book for the days you look at that pork chop/chicken breast/flank steak/salmon and pray for inspiration. It also has great ideas for sauces for vegetables and pasta. And *ahem* some desserts. Because this is an ATK book, it also lets you know why the recipe works, what it goes with and all kinds of other stuff to take the angst out of saucing. Some of the sauces are a bit complicated, but the majority are simple and delish! Highly recommended!!

LOVE THIS BOOK!
I could not love this book more!!! I asked my son to find me a cookbook for just sauces and he picked a winner! Have made several recipes and they have all been delicious. I like how the sauces are paired with a few suggested recipes. The recipes are not complicated and the photos and directions are very helpful. I will be going back into this cookbook over and over again!

Excellent resource for delicious, attainable food
I'm the kind of person who thinks, we have the internet now, why do we even have cookbooks anymore? I got this book from the library, and ended up making so many amazing, no fail recipes from it, that I bothered to buy it. The recipes in here are just delicious. They really are. And the directions were really clear and helps me make the same good food each time I tried the recipe. It's very flexible, in that it gives you recipes for different sauces and sometimes suggest ways you could change the dish by using a different sauce. Honestly, I would consider buying several books in this series by the America Test Kitchen.

Useful addition to the cook book shelf
This is a very interesting cook book with (as the name suggests) a focus on various types of sauces. It was so admired by friends visiting that we have bought several copies to give as presents. A worthwhile buy.

Great Sauce Book
This is a great book, if your always trying to find something to spruce up your bland meals, this is the book, it is laid out very good, it will give you sauces based on what meats or fish or chicken, etc. your having, it makes it so easy to find s sauce for your meal. and the sauces are not that complicated to make,

Another awesome book from America’s test kitchen
First off, I love America’s test kitchen and this book does not disappoint. Its a fun book- great guide on how make sauces for certain meats and styles of food and lots of variations I recommend if you want to perfect some staple sauces and learn new and exciting ones to keep dinner interesting
