Taste great and so much better for you!
Love the texture, taste, the gluten free alternative, and the protein. These cook up great in an Instant Pot and with a light spray of oil, they last for several days in the fridge for several meals with no sticking together at all.

Excellent purchase.
Ordered these 6 months ago, decided to try it. It was fantastic! I like it better than regular noodles. It has a soft and chewy texture that I love. Not al dente, a little different. A bonus is the fiber and protien! Tried it with Kirkland garlic butter shrimp. Had a 650 calorie dinner 50g of protien and 11g of fiber. Highly recommend!

I wish, but it's not good
I'm sorry I really was excited about these noodles because of the macros, but I had such a strong reaction to the texture of these noodles. I literally have not felt this level of disgust for a food in awhile and it's now made me spooked to try other healthy alternatives for dishes. And I've tried the other noodles and pasta alternatives (lentil, chickpea, kongjac) and been fine. I don't know why I had such a strong reaction to it, but idk man it just was not good.

Close enough!
Is this tricking me into thinking it is a real noodle? No. Is it close enough? Yes! Make sure you boil them till totally soft. I think red sauce works best with these. Season them up well and they are pretty good. Texture is close enough to a noodles. Will rebuy.

Surprised to absolutely love these noodles
I bought these for their nutritional profile - like everyone right now I’m looking to get a little more protein and more fiber. I like to eat as plant-based as I can and my husband with type 2 diabetes watches his carb intake, so these noodles are great for all of the above! Prepared the fettuccine as specified on the box, boiling to the longer cooking time and rinsing in cold water. The flavor of the noodle is very neutral - which is what I want when using noodles. I used the noodles with a pasta sauce and meatballs, and I’m using them also for a noodle bowls with added veggies and tossed with a sesame ginger salad dressing (as pictured). I think the noodles are really versatile, they don’t stick together and they don’t fall apart or get mushy. The texture is chewier than a traditional noodle, but in a really pleasing way I like and I think it works well in the noodle/veggie bowl format, either warmed or cold. I’m making a box each week, keeping the noodles in the fridge and using them with different veg/greens/salad dressings for lunches. The edamame fettuccine seemed slightly thinner than The Only Bean black bean fettuccine which is a pro, but they taste the same and function the same (not sticking together, not disintegrating in sauce). I prefer the color of the edamame noodles (black food is a little off-putting for me). I’m buying the 6 pack of the edamame noodles in my next order!

Texture is slightly different than regular noodles once cooled
I'm giving this a 5* so far. We used this box as spaghetti noodles. Texture: The texture was "off" couldn't exactly say why it just wasn't quite the same texture as regular wheat pasta, so if u are a texture person, this might not be for you. Taste: When eaten without sauce it has more of a "wheat" or undercooked flour like taste to it, when eaten with spaghetti sauce all I could taste was the meat, sauce, and vegetables in the sauce; the noodles didn't really have a taste that was noticeable. Filling: i Just ate a normal sized spaghetti bowl (equivalent to what i normally eat), at 8:30pm I will update when I get hungry again. My metabolism is different then yours so it may be more or less filling, but this should help you if you want more "filling meals" or not. My bf is a bigger guy (375lb) he ate 1 bowl and works at a packing plant, i am disabled so I am more sedimentary. He could obey eat about half the size of bowl he normally does with other noodles). He finished his at 8:35pm. He will let me know when he gets hungry so I can provide a time frame for him. So anyone who reads this review can get a understanding of how filling these noodles are. We normally like meat heavy dishes, this dish had about half the meat we normally have in spaghetti, so keep this in mind too. Think about the equivalent of 6-8 store bought meatballs worth of meat in a meal, for refrence.

Surprisingly Enjoyable
We really liked this pasta, it only takes 5 mins to cook. The texture was a bit like fresh egg pasta and we both love edamame beans so familiar flavour. Mixed with pesto and a pinch of salt…. very satisfying. Great for Keto when you’re missing pasta, every now and then just a tad pricy.

Trial for Diabetic
I have secondary diabetes from pancreatitis. After doing research these were supposed to be okay for most diabetics to eat. Unfortunately due to my usual situation i can't eat what most diabetics can. So this didn't work well for me. It rose my blood sugar quite a bit and the flavour was average
