Which knife would be good for cutting meat into like jerky or trimming just in general? The boning knife?

Hi, about a 100 years ago I once worked in restaurants. For jerky ( cut partially frozen, easier) any chef knife will work. The only time I used a boning knife was for whole chicken/duck. Bon Appetite!
