Hello, I purchased this flour on June 4th 2020 and it was rye flour. Did you change the item you are selling to dark rye?

Light rye flour is generally a mix of white and rye flours, and dark rye is the equivalent of whole grain rye flour – it has all the bran and the germ in the flour and light rye does not.  The company probably wanted to clarify that the their product is whole grain.  This company only sells whole grain rye and other specialty flours.  They did not change.

How to make a good rye bread in bread machine using this flour?

If you only want to use the rye flour, the bread will be very small, squished and heavy. This is what I do using my bread machine: I use 1.5 cups of rye flour, 1.5 wheat flour (of the same Organic Milling Company) and 1 cup all-purpose generic grocery store flour (I like Trader Joe's all purpose unbleached flour, but it doesn't have to be TJ'S). The all purpose flour is not as healthy, but it holds the bread together. If you skip it and use just 50 50 mix of rye and wheat flour, the bread may easily crumble. I also add 2 tsps of salt, 1 tsp of sugar, 1 Tbsp of oil and 2.75 tsps of Red Dry Yeast. The bread rises nicely and it's much puffier than bread made only from rye flour.

Is this orgainic rye flour bleched or unbleached?

Have never heard of bleached rye flour.  This seems to be whole rye flour ...and absolutely perfect for  the currant/raisin pecan/walnut  caraway  rye bread recipe from The Inn at Little Washington Cookbook by Patrick O’Connell. I have made this recipe  for over 20 years, but do not salt encrust.  Bake in French bread pans if you have them.  Favorite size is “logs” no larger than 2” diameter .Enjoy!
