How long will they last in the freezer?

I had my in the freezer for about three months and didn't have any problems.

What is the height of the crusts? I see they are 3" wide, but how tall are they?

One and a quarter, one and a half inches in height.

Are these shells frozen

No they are not frozen when delivered. However, I froze them after I received them and pull them out as needed.

Do the pie crust come in the foil pans as pictured?

Yes They were not my favorite and would not purchase again.
