Good quality and natural
One family member can't eat folic acid, so we take these rice noodles to the Thai restaurant. They cook them and include them in his meal. Yum.

Gluten free
If you are gluten intolerant these are good noodles to try. They aren't perfect, of course, but they aren't bad either. Have eaten a lot worse tasting gluten free noodles.

Not just for stir fry
I use these anytime I need noodles, not just in stir fry. Makes a good tuna noodle casserole, or a hamburger mushroom dish. Just a bit chewy but better than most.

Nice rice pasta
Most of rice pasta is very thin and transparent. This one looks and feels like a wheat pasta. Which requires a bit longer cooking. Which is not a problem. I only use it for a soup. It tastes great.

Texture is awful
I've been making these type of rice noodles for years and have used many different brands, some organic. The texture is supposed to be quite firm after soaking in hot water for a few minutes. They are supposed to be very al dente because they go into hot soups or stir fries. These noodles have the worst texture I've ever seen. They are gooey, gummy and completely stick together. There's nothing you can do even if you soak them in cold water. They also crumble and fall apart. Sorry excuse for rice noodles.

It is hard to find good rice noodles.
We have found some great recipes that include rice noodles. The local grocery store carries a different brand that is much easier to prepare and not over cook. If you over cook the noodles are not edible. The flavor on these noodles is good - again if you cook/prepare correctly. But it takes a technique to prepare - follow instructions carefully. We have found other rice noodles that are better.

You have to get the water to boil on high. Pour a tbsp or 2 of oil. I used toasted sesame oil from trader Joe's. It's the best. Put in the noodles and turn down to medium. Stir it like... a lot. Or the noodles will stick together. You'll prolly mess up the first time cuz you gotta learn the noodles. From the time you put the noodles in the water to the time you take them out is about 7 minutes. Turn the heat OFF after 7 minutes. If they're not done, leave them in the water with the heat OFF and keep checking them every 30 seconds.
