Well made. Extremely sharp. Weight is balanced. Well made . Cuts through medium cooked ribeye roast and steak well. Feels and functions like a premium product . Only used 3 times and hand washed each time so cannot comment on longevity . Concern is if it will hold its edge as I will unlikely be able to sharpen it to factory specs sharpness .

I almost sent this back after seeing how long the blade was. What was I thinking? But I quickly changed my mind when slicing a large tri-tip roast. Think a violin bow . . . You gently pull this longer knife through the meat with one long stroke instead of many short strokes. I didnt realize by using my 7-8" knives, I also had to exert more downward pressure, even with good quality knives. Besides being extremely sharp, the longer knife took minimal effort to slice the roast quickly. Im looking forward to using it next Thanksgiving.

Very sharp. My partner didn’t realize I bought a bread knife and was able to cut freshly baked white bread slices with the chef’s knife. That’s certainly impressive. I deducted a star for fit and finish. The metal and wood handle is a little sharp in the hand and seems to be related to the wood being slightly smaller than the metal and the squared edge is proud of the wood. That said, the shape is quite comfortable in the hand and ergonomic for the “correct” way to hold kitchen knives. I’m not sure if the metal goes through to the end of the handle, but I suspect that it does not. This makes me question the long term durability, but time will tell. Decent value for the price paid! I bought the bundle and got more than I needed but everything I wanted.

This knife feels nice in the hand and cuts like butter. Very impressive. I highly recommend it!

i will not speak to what a butcher would want in a knife. however i do purchase whole pork loins and kc strips. i have used this knife a handful of times. as far as breaking down meat for myself, this one works fantastic. just as sharp as my german steel knife. also very comfortable in my hand. at the roughly $60 price tag its worth it, on sale becomes a great value. and not that it matters on the function, but it looks very nice as well.

Mate I reckon i could split atoms with this baby its that sharp. Or maybe its just my tender brisket lol, either way you can't go wrong with this range, I have a few knifes from this mob and they pretty decent fpr the cost. And if you like me, buying big slabs of meat from costco then, this knife is a beauty to cut nice straight chonky cuts of meat.
