What is the difference between pristine and stability? is bacteria different? or just a different name for basically the same product?

Yes the bacteria is different and they serve different purposes. Pristine breaks down organic matter in the tank into ammonia. Stability turns ammonia into nitrite then to nitrate which is safe for your fish and taken up by plants as food. This is a very simple explanation as there may be some slight overlap in their uses. Take this as broad strokes.

Do I need to add ammonia to the tank while using this product if there are no fish in the tank yet to produce it?

Personally, I use the dose for the time suggested whilst starting up new tanks and sometimes old tanks with dieoff occurring from exposed live rock to introduce the good bacteria to allow it to build to its proper level allowing the bacteria to consume ammonia. After ~ a week...' Ghost/Phantom' feed with a pinch of food daily until you have an ammonia reading. At that point, you can stop adding the food and let the bacteria run its course. Slow is smooth...
