Absolutely outstanding quality especially for the price, I have had and use knives four times the price of this and they don't even come close, this was an absolute bargain and an absolute must for anybody looking for a good quality filleting knife, is absolutely razor sharp out of the box and these very well balanced and comfortable to handle

Default sharpness could be improved

I thought this was going to be an excellent knife however my first impression is not that good. The blade appeared to get quite dull after just a few uses which surprised me so I had to resharpen it. It did sharpen up very nicely and now appears to be keeping its edge. It now fillets fish and slices meat easily so hopefully it was just a one off. The build quality seems good so hoping the knife will last.

Couteau japonais effilé et très beau mais qui donne des frissons (par peur de se couper un doigt !)On le manipule avec précaution pour découper des filets de poisson ou de volaille. Il est présenté dans un étui élégant, à tel point que nous le rangeons dans une vitrine. C’était un cadeau qui a été apprécié.
