It is very sharp, but I do not know if it would be the best choice for scoring bread. It works extremely well on chestnuts.

What is the best way to sharpen this knive? The blade is very small and the edge seems to dull quickly.

Can this pry an oyster and not be bent?

I would say "no". It's a sturdy little knife but I feel it could bend or even break if used for oysters.
