Q: Can i add my old amcrest cameras to this system by using bnc/ethernet adapters?

I suppose it might be possible to use BNC/ethernet adapters but the quality of older analog cameras is such that the money you spend on adapters would be better put towards new digital cameras. Unless of course you have particularly high end cameras.

Q: Can this camera run on just cat 5 or does it require additional power cable?

It is a POE camera, so it will run on just the CAT5 cable, IF a POE capable NVR is supplying the power, or a POE injector.

Q: Can you run cat5/cat5e or cat 6 with this system?

Yes i an running cat5e. You can run cat 6 cable

Q: Can you use the vga and hdmi outputs simultaneously?

You should be able to use both at same time. However, it is more practical to use an HDMI splitter to view on more than one screen.
